Highly concentrated, lemon oil is typically used by the drop in most baking applications. It should be used very sparingly. We recommend that gloves and eye protection be used when handling lemon or any other essential oils. Our Oil Lemon California C.P. FCC is 100% and contains no additives. It is 3 to 4 times the strength of water or alcohol based extracts. When substituting oils for extracts, use 1/4 to 1/2 teaspoon of oil in place of 1 teaspoon of extract.
